Action with Windows 10 "upgrade"

To stop any possible problems will Protection Status > Disable All Components  keep EIS from running until turned on again ?

If not, best way to disable EIS until upgrade installed ?

Yes, that's the best way to disable protection temporarily. Just keep in mind that you'll have to turn protection back on manually if you use that method.
