I installed Emsisoft on my computer for malware and antivirus protection. Should I turn off windows defender, antivirus or any other windows security? And if so, what is the best way to turn the items off. I thought that when I installed Emsisoft that it would have done that for me?

Help would be much appreciated

If you open Windows Security and double-click on the Virus and Threat Protection, what does it say?

Well you need take no action as Windows Security Center shows that Emsisoft is in charge of the protection on your machine.

It shows the same as mine does  :)

To add to what @stapp has said, Windows 10 will automatically turn off Windows Defender when a third-party Anti-Virus software is actively protecting your computer, so there's no need to worry about it running while Emsisoft Anti-Malware is installed.
